SAN SEBASTIAN CHEESECAKE

It is originally invented by a chef named Santiago Rivera of a restaurant in Spain. It has an obvious “burnt” look but creamy in the middle, firmer cheesecake texture on the exterior. Well, unlike American cheesecake, it does not have a crust. It tastes like a caramelised cheesecake, a good balance of bitterness and sweetness from the creamy custardy exterior. This kind of cheesecake is like a combination of an airy soufflé and creme brûlée, making it difficult to stop at just a single slice! Good news is…it is now available at Hippusuta!
